Broiled Salmon for All!

I may be in week one of a four week all vegan diet at the moment (more on that later), but that doesn’t mean I can’t think about some of my favorite fish-based meals. This recipe for broiled salmon is not only an excellent dish for anyone who absolutely loves salmon, but it is also great for those who are just testing out the waters. We love to make this with steamed brussel sprouts, because the sauce used for the salmon makes a great dip for the sprouts as well!
 
Ingredients (4 portions):
1 large (1 pound) salmon filet
sea salt
pepper
1 lemon
4 tablespoons of Dijon mustard
1 tablespoon of low-sodium soy sauce
1/2 tablespoon of ground ginger
 
Directions:
Pre-heat your broiler, placing an iron-cast skillet inside so that it heats up as well for about ten minutes, or until really hot. (Any broiling pan can be used in place of the cast iron skillet.) In the meantime, cut your salmon filet into 4 equal portions. Give it a good squeeze of lemon, and add a little salt and pepper. Once this is done, carefully remove the hot pan from the broiler, and place the salmon on it, skin side down. Broil for approximately 8 minutes, depending on how thick the fish is. While it is broiling, mix the mustard, soy sauce, ginger and half a lemon in a bowl. You can increase the amounts for the sauce if you wish to do so.
 
Once the salmon is done, remove it from the broiler, place on plates and drizzle it with the mustard-soy-lemon sauce. You can serve some more on the side, along with additional lemon, for people to use to taste. Enjoy!
