Home Made Vegan Black Bean Burgers (No Cardboard Taste Here!)

Ron and I are experimenting with vegan recipes, so we have been dreaming up all sorts of meal options. Here is a recipe for a black bean burger made from scratch that takes 5 minutes to put together and tastes pretty heavenly!

Ingredients (makes 12 patties):

1 15-oz can of black beans, drained and rinsed

1 28-oz can of whole tomatoes (unstrained)

1 carrot

3 cloves of garlic

tablespoon of onion powder

tablespoon or garlic powder

1/4 of a yellow onion

3 cups of oats

oregano to taste

crushed red pepper to taste

vegan Daiya mozzarella cheese is optional

Directions:

Put the black beans, carrot, onion, tomatoes, in a food processor and chop thoroughly. Add mixture to bowl with oats and seasoning, mix by hand and let rest for two minutes. Pre-heat a non-stick skillet on medium low. Use a 1/3 cup scoop for each pattie. Place pattie on skillet and flatten, cook on each side for five minutes.

Tastes great with a dijon mustard & soy sauce mix for dip. Enjoy!
