The other day I was sitting around wondering what to have for dinner… I wanted something hearty but healthy, and something I don’t have regularly. I decided to get myself a sweet potato and go from there… and the results were delicious! I ended up with super easy to make sweet potato fries that were ready in no time and absolutely delicious and healthy. None of the deep-fried trans-fat bombs to be found here!
Ingredients (For 2)
1 large sweet potato
1 tablespoon of extra virgin olive oil
salt to taste
pepper to taste
(any other spice you can dream up that would work on a fry…)
Directions
Slice up your sweet potato any way you like- I cut mine up like steak fries and that worked great. Once they are all cut, put them in a bowl with the oil, salt, pepper and spices and mix it up until everything is coated evenly. In the meantime, pre-heat your oven to 400 degrees.
Spread the sweet potato out on a non-stick baking sheet and pop them into the oven for 30 minutes. I took mine out half way to turn them over. They are great as is, or served with any of your favorite condiments. Enjoy!
